Ingredients
4 boned, skinned chicken breast halves (about 2 lbs.)
Note: If I’m short on time or don’t want to do all the pounding in step #1, I just buy the chicken tenderloins instead.
1/4 cup fresh squeezed lime juice
1/2 cup chopped fresh cilantro
6 cloves garlic, chopped
1 tablespoon olive oil
salt and pepper to taste
Directions
- Pound the chicken breasts to an even thickness (about 1/2 in.) and place in a shallow baking pan.
- In a small bowl, mix all remaining ingredients. Place chicken in a large ziplock bag. Pour the sauce over the chicken and turn pieces to coat evenly. Cover and chill at least 30 minutes or overnight. The longer you let it marinate, the stronger the flavorsÂ…just don’t forget to turn the bag occasionally.
- Lay chicken on a grill over medium heat (I have also cooked the chicken in my NuWave oven and on my Foreman GrillÂ…works great on each). Cook, turning once, until no longer pink in the center, 4 to 6 minutes per side.
