Recipe For Mock Mashed Potatoes (Almost As Good As The Real Thing!)

With the new year here, I’m back on the workout and eat right wagon. Although this time, I’m making a lifestyle change and thinking differently about the way I think about food and exercise. I gotta. I’m gonna be 40, and my body is starting to show that I’m getting older. Anyways, one of my favorite things to eat in the whole world is my loaded mashed potatoes recipe. However this is now a recipe I can only eat occasionally. So when I’m really, really craving mashed potatoes, I now make this mock mashed potatoes recipe.

Mock Mashed Potatoes (It’s Really Cauliflower!)

  • 4 cups cauliflower, finely chopped fresh or frozen works great
  • 2 tablespoons real sour cream, more to your taste
  • 2 tablespoons butter (not margarine)
  • Salt, pepper and any other of your favorite seasonings to taste


  1. Steam or microwave cauliflower until very soft.
  2. Put cauliflower in blender or food processor with butter and sour cream.
  3. Process/blend until creamy like mashed potatoes.
  4. Add seasonings to taste and serve immediately.
  5. Top with green onions, cheese, and bacon for "loaded mashed potatoes"


I like this recipe because you can eat it with or without all the extra goodies on top and it still tastes good. It’s not the mashed potatoes I know and love, but it does the job.     These sound delicious! I've had these at Ruby Tuesday's and they are so yummy... I'm going to see if I can fool my kids (and husband) into eating these!
  3. I love cauliflower, but my husband thinks it's only what you add to it that makes it any good. Can't remember if Princess hates it, or just the cheese sauce that goes on top, so I may have to try her out with this next time I buy one :)

  5. I love cauliflower almost as much as Brussells sprout, well maybe a little more. Hubby dear refuses it. But he loves mashed potatoes. Wonder if he could be tricked? I'll just have to try this.

    This is a big South Beach recipe trick. If you google South Beach potatoes it will come up. I've made it for Thanksgiving each year for the last 5 or 6. Requested by sev fam members who don't even know it's a "diet" recipe.
