Last week, I gave you my husband’s favorite steak recipe: Steaks with Bacon-Mushroom Bourbon Sauce. Unlike most of the recipes I share with you, this one takes some time and effort to make, but it’s well worth it! I also teased that I’d be giving you a recipe this week for his favorite side dish…one that is so simple to make that we eat it all the time. Simple to make, but it tastes like you put a ton of effort into it:

Spinach Salad Recipe: Hot Spinach Salad With Bacon and Vinegar

Ingredients

  • 4 slices bacon, diced into small pieces
    • 1/4 cup white vinegar
    • 2 teaspoons sugar
    • 1 bag (at least 10 ounces) fresh spinach
    • 5 green onions, sliced
    • Salt and pepper to taste

To Prepare

In a skillet, cook the bacon over medium heat until crisp. Drain, leaving a teaspoon or so of bacon grease. Stir in vinegar and sugar. Heat (stirring constantly) until sugar is dissolved. Remove from heat.

Add the spinach and onions to the bacon mixture. Toss 1 to 2 minutes or until spinach is wilted. Add salt and pepper to taste.
