Simple Pumpkin Cookie Recipe

It’s the recipe that I keep getting asked about…the simple pumpkin cookie recipe I found and made recently. Since making the recipe the first time, I’ve made two more batches the kids love them so much!

These cookies are ridiculously easy to make, and require only two ingredients! Yep, I said only two ingredients!

Simple Pumpkin Cookie Recipe

Ingredients

  • 1 box of spice cake mix
  • 15 ounce can of pumpkin

Directions

Preheat oven to 350F.

In a large bowl blend the cake mix and pumpkin together until well mixed.

Line a cookie sheet with parchment paper and lightly spray with cooking spray. Drop cookies by 1 tablespoon full onto the cookie sheet.

Bake for 17-19 minutes. Let cool for 1 minute before removing from cookie sheet.

As an alternative, you could add a cup of chocolate chips or cranberries to the mix. My kids love the cookies with the cranberries in them so much I haven’t even tried them with chocolate chips yet.
