Over the summer, I decided I was tired of being tired, feeling terrible, and eating terribly. So I started Weight Watchers and so far I’ve lost 15 pounds! Weight Watchers Friendly Easy Egg Scramble

I am a HUGE fan of breakfasts…I’m talking big Sunday breakfasts that keep you full all day. Now that I’m really paying attention to my diet since starting Weight Watchers last month, those breakfasts have changed. No more eggs and potatoes and bacon, now they’re much healthier (though just as filling) breakfasts. This recipe is one of my favorites! It’s super simple to make and it’s delicious….even the kids like it! And while this Easy Egg Scramble might seem like a splurge, it’s definitely a healthy way to start the day.

Bonus points because it’s Weight Watchers friendly! With the optional Canadian bacon, it’s only 8 SmartPoints! It’s only 7 SmartPoints without the Canadian bacon. If you don’t want the toast, deduct 2 SmartPoints.

Easy Egg Scramble

Easy Egg Scramble - Weight Watchers Friendly

Ingredients

  • 1/2 cup bell peppers, chopped
  • 1/2 cup mushrooms, sliced
  • 1 medium green onion, chopped
  • 1 cup fresh spinach, chopped
  • (optional) 2 slices Canadian bacon, chopped
  • 2 large eggs
  • 1/4 cup low fat Cheddar cheese, shredded
  • 1 slice whole wheat bread, toasted

Instructions

  1. Over medium high heat, saute all the veggies (and Canadian bacon if including) in a bit of olive oil or I Can't Believe It's Not Butter.
  2. In a small bowl, scramble the eggs, adding salt and pepper if desired.
  3. Add the eggs to the pan with the veggies and cook the eggs until done.
  4. Add the spinach, and stir until wilted.
  5. Place the egg scramble on a plate and top with cheese.
  6. Serve with the whole wheat toast.

Sometimes I don’t have veggies on hand or don’t feel like chopping up a bunch of veggies, so I’ll just make the scramble with Canadian bacon and spinach. Add some Tabasco and it’s delish!

I love this easy egg scramble because it’s versatile, easy to make and super filling…with or without the toast. Sometimes I even half the recipe when I’m not really hungry and it’s just as filling. And remember, add any veggies that you’d like! Since veggies are free SmartPoints, you can eat as many different ones as you’d like. Try it with feta cheese or leave the cheese out. It’s super versatile to create an easy egg scramble that you’ll love, too.

They are so delicious! It’s such a light and healthy appetizer idea and there’s only 5 ingredients. It’s a perfect appetizer or snack on a hot day. They are super quick and easy to make and inexpensive, too. In fact, these Caprese bites are so easy to make that Lila makes them for me!

Weight Watchers Friendly Caprese Bites

Not only are they healthy and delicious, they are also Weight Watchers friendly! I started Weight Watchers a couple of weeks ago, so I’ve been playing with several of my favorite recipes to make them Weight Watchers friendly so that I can continue to enjoy them.

Here’s the good news: You can have ELEVEN Caprese Bites and it’s only 3 Weight Watchers points! If you leave off the balsamic vinegar, it’s only 2 points!

Weight Watchers Friendly Caprese Bites

Ingredients

  • 3.75 inch toothpicks
  • 1 package of cherry or grape tomatoes, washed and dried
  • 8 ounces of fresh Mozzarella pearls
  • Fresh basil leaves
  • Cracked pepper
  • 2 tbsp. Balsamic Vinegar

Instructions

  1. Skewer 1 tomato, 1 basil leave (fold in half if the leaves are large), and 1 Mozzarella pearl.
  2. Place finished toothpicks on a plate or on a serving dish. Sprinkle with freshly cracked pepper, to taste.
  3. Drizzle the balsamic vinegar over the top of the toothpicks.

NOTE: I use extra long toothpicks (3.75 inches) so that you have room to hold on to it easily. You can use longer sticks or skewers, but I like just using toothpicks because you can pop the whole bite into your mouth without having to touch the food or stab the back of your throat with the stick!

One of my kids’ favorite things to do is eat a snack (usually popcorn or potato chips) while playing on their iPads. “Playing” means using their fingers to build worlds made of blocks or playing games that require thinking ahead and considering the bigger picture. Those are good things; they are using their brains and imaginations to solve problems. But they are also eating potato chips and trying to turn themselves into couch potatoes. Trying to keep kids healthy and active over summer break is a challenge, and I like a good challenge! That’s where Fuel Up to Play 60 comes in.

I’ve told you about Fuel Up To Play 60 and why it’s so important during the school year to keep kids active and eating healthy during the school year. It’s also important over summer break, too! Real California dairy families have continued activation of Fuel Up to Play 60, the campaign created by the NFL and National Dairy Council that promotes physical activity and good nutrition in schools.

The campaign encourages kids to fuel up with nutrient-rich foods: low-fat and fat-free dairy (dairy is a good source of protein, calcium and vitamin D.,) lean meats, fruits, vegetables and whole grains AND to get at least 60 minutes of physical activity every day. Easier said than done over lazy summer days.

Fueling their bodies with the right nutrition gives them the energy they need to get out their and play with friends and family all year long and the Fuel Up to Play 60 campaign gives you everything you need to make it happen!

It’s easy to just let the kids eat junk food and lay around, especially if it’s super hot outside. Staying active over the summer starts with nutrition…a healthy meal doesn’t have to be extravagant or difficult to make.

Don’t forget, helping your kids succeed both in the classroom and throughout their lives starts with YOU being a role model. Look for ways to encourage healthy eating all summer long. Ask the kids to find a new recipe they’d like to try for dinner. Get the kids to help you in the kitchen. Visit a farmer’s market and let them pick out fresh produce. Get outside and help them get  physical activity this summer…it doesn’t have to be “exercise”…have a water balloon fight or races in the pool. Keep nutrition and physical activity top priorities over summer break and see the difference when school starts in the fall.
