New year, new promises to myself to take better care of myself and lose weight. What makes this string cheese the ideal snack is that it’s cheese, which is my favorite thing in the world, and it’s only 1 SmartPoints per serving! That’s almost as good as free!

This string cheese doesn’t taste like a “fat free” or “diet” cheese. It’s made from milk and is full of flavor – it has an amazing taste you have to try to believe. Not only is Weight Watchers Light String Cheese delicious, the individually wrapped string cheese offers portion control and are a great snack whether you’re home or on the go. Whether I’m working or watching TV, this is the kind of snack that satisfies me.

This is my go-to on-the-go snack; a package of Jack Link’s Beef Steak and a Weight Watchers Light String Cheese. This is one I also go to when I’m starving or feel like I need a meal instead of just a snack. The beef steak is also only 1 Smart Points, so for a total of 2 Smart Points, this one is one of my favorite, filling snacks.

Vampire Dip Recipe (Not For Date Night!)

I am a huge fan of appetizers, especially hot ones. I have shared a ton of appetizer recipes here on my blog and have a board dedicated to appetizers on Pinterest. Anytime I find a recipe I can’t wait to try, I demand a family get together so I can make it. Over the weekend, I shared a picture of a copycat recipe I made for Slater’s 50/50 Vampire Dip that my pregnant sister-in-law asked me to make for her.

Slater’s offered me a job, which I’d happily take, and others on Instagram, Facebook, and at school chatting with moms asked for the recipe. So I thought I’d share!

Copycat Recipe For Slater’s 50/50 Vampire Dip

This Vampire Dip recipe is super simple to make, and absolutely delicious. It’s basically a classic artichoke dip recipe with a twist. Why’s it called Vampire Dip? Well, there’s 9 (or more!) cloves of garlic in it…it’s definitely NOT an appetizer you want to make for date night!

Ingredients

  • 9 cloves garlic, minced (use more or less to suit your taste)
  • Salt, to taste
  • 2 cups shredded Italian cheese blend
  • 8 ounces cream cheese
  • 4 ounces mayonnaise
  • 14 ounces artichoke hearts, drained and chopped
  • 1 teaspoon ground pepper

Instructions

  1. Preheat oven to 350ºF.
  2. Sprinkle a pinch of salt onto the minced garlic, and mash with a fork to get make it smoother. It doesn't have to be perfect, but make sure you get any big chunks.
  3. In a large bowl, combine garlic, half of the shredded cheese, cream cheese, mayonnaise, artichokes, salt, and pepper. Mix well.
  4. Spread into a greased 8×8 baking dish. Sprinkle remaining cheese on top. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until the cheese is browned and bubbly on top.

Notes

Serve with tortilla chips, French bread, pita wedges or chips, or any veggies you love!

The dip was absolutely delicious as is. My siblings also gave me some suggestions for improvements to kick it up a notch. The most popular suggestions were more artichokes (or chunkier pieces of it), adding roasted garlic, jalapeño, Italian sausage, spinach, and/or more raw garlic!

They are so delicious! It’s such a light and healthy appetizer idea and there’s only 5 ingredients. It’s a perfect appetizer or snack on a hot day. They are super quick and easy to make and inexpensive, too. In fact, these Caprese bites are so easy to make that Lila makes them for me!

Weight Watchers Friendly Caprese Bites

Not only are they healthy and delicious, they are also Weight Watchers friendly! I started Weight Watchers a couple of weeks ago, so I’ve been playing with several of my favorite recipes to make them Weight Watchers friendly so that I can continue to enjoy them.

Here’s the good news: You can have ELEVEN Caprese Bites and it’s only 3 Weight Watchers points! If you leave off the balsamic vinegar, it’s only 2 points!

Weight Watchers Friendly Caprese Bites

Ingredients

  • 3.75 inch toothpicks
  • 1 package of cherry or grape tomatoes, washed and dried
  • 8 ounces of fresh Mozzarella pearls
  • Fresh basil leaves
  • Cracked pepper
  • 2 tbsp. Balsamic Vinegar

Instructions

  1. Skewer 1 tomato, 1 basil leave (fold in half if the leaves are large), and 1 Mozzarella pearl.
  2. Place finished toothpicks on a plate or on a serving dish. Sprinkle with freshly cracked pepper, to taste.
  3. Drizzle the balsamic vinegar over the top of the toothpicks.

NOTE: I use extra long toothpicks (3.75 inches) so that you have room to hold on to it easily. You can use longer sticks or skewers, but I like just using toothpicks because you can pop the whole bite into your mouth without having to touch the food or stab the back of your throat with the stick!

These ham & swiss finger sandwiches are always a crowd pleaser, and can be kept warm in a crockpot.

Garlicky chicken pesto pizza can be cut into small squares for easy pick up.

This warm bean dip pulls double duty as both an appetizer and as a filling for burritos.

This cookie dough dip is a favorite of kids & adults!

This holiday popcorn can be made anytime of the year. And trust me when I say to make extra because it will be gone before you know it!

Pickleback Shots anyone? It’s a fun way to do a shot (if you like pickle juice!)

Jalapeno Popper Wontons (Perfect for Game Day!)

Just about everybody I know loves jalapeño poppers. Some make them with just cream cheese and jalapeño, others add bacon or sausage. In our case we add all three, and more cheese! I love twists on classic recipes, and this recipe for jalapeno popper wontons doesn’t disappoint. But first, a couple other favorite twists…

My mom makes the yummiest easy jalapeño poppers ever. You can bake them or throw them on the grill. Either way, they’re delicious. They ain’t pretty, but they don’t need to be.

As you can see, we’re big fans of jalapeño poppers. Another fun way to make them is in wonton wrappers. It’s super easy to do and they’re always a hit. Make a double batch because you won’t have any left!

Jalapeno Popper Wontons

How to make a spin on classic jalapeno poppers...jalapeno popper wontons! Includes links to other popper recipes and other tailgating & party food recipes.

Jalapeno Popper Wontons
Save Recipe

Ingredients

  • 8 ounces cream cheese, room temperature
  • 1 lb of bacon, cooked and crumbled (*See Notes)
  • 1/2 pound of bulk sausage (I used Jimmy Deanâ??s hot sausage), cooked & crumbled (*See Notes)
  • 4 to 6 jalapenos, seeded and chopped. If you like heat, leave about 3 of the jalapenoâ??s seeds in.
  • 1 cup of cheddar cheese, shredded
  • Wonton wrappers

Instructions

  1. Preheat oven to 400. Lightly grease a cookie sheet with cooking spray.
  2. Mix together all ingredients in a large bowl.
  3. Place wonton wrappers on the cookie sheet. Place about a teaspoon in the middle of each wrapper.
  4. Fold each wrapper in half to make a triangle, fold them up into a small basket, or pinch in the middle and pull the edges out to make a "star".
  5. Spray the tops of the wontons with cooking spray. Bake 5 - 7 minutes until browned on the edges.

Notes

*Check out my post on how to oven fry bacon and sausageâ?¦you can cook both in 20 minutes and you just throw away the mess!

If you have leftover jalapeno mixture, make more wontons! You can also put the mixture in a small crockpot and heat through. Serve with tortilla chips.
