New year, new promises to myself to take better care of myself and lose weight. Last year in June, I started Weight Watchers (which, by the way, I LOVE and highly recommend) with a group of friends and lost almost 20 pounds by October! I was extremely proud of myself. Then the holidays came around, and let’s just say that I am looking forward to getting back on track. I’m a huge snacker, so instead of eating big meals each day I do a lot of little snacks here and there. One of my favorites is Weight Watchers Light String Cheese.

What makes this string cheese the ideal snack is that it’s cheese, which is my favorite thing in the world, and it’s only 1 SmartPoints per serving! That’s almost as good as free!

This string cheese doesn’t taste like a “fat free” or “diet” cheese. This is my go-to on-the-go snack; a package of Jack Link’s Beef Steak and a Weight Watchers Light String Cheese. Creamy Sausage & Spinach Pasta
Save Recipe

Ingredients

  • 1/2 lb pasta of your choice
  • 3 tablespoons of jarred pesto (or make your own!)
  • 1 lb cooked smoked sausage, sliced
  • 3 garlic cloves, minced
  • 8 ounces bacon, cooked and chopped (save time and buy the pre-cooked bacon in the deli aisle)
  • 2 cups spinach, chopped
  • 1/4 cup of sundried tomatoes, chopped
  • 2 cups low-fat Alfredo sauce
  • Salt and fresh ground pepper, to taste
  • Chopped basil to taste (optional)

Instructions

  1. Prepare the pasta as instructed on the box.
  2. Heat the pesto over medium heat in a nonstick skillet; add the sausage, garlic, and bacon and cook for 10 minutes, stirring often.
  3. Add the spinach to the skillet and cook for 2 minutes, or until wilted. Season with salt and pepper.
  4. Add the sundried tomatoes and Alfredo sauce and stir until mixture is coated. Cook until warmed through, about 5 minutes.
  5. Add the cooked pasta and stir until well blended. Sprinkle with fresh basil, if desired.

But there’s no way I’m going to let that happen! There are lots of ways to get rid of Halloween candy, from freezing it to donating it to experimenting with it. Freeze It

Most candy freezes great! Use frozen candy throughout the year to add to baking, melt into hot chocolate, make milkshakes, ice cream, cookie dough, or to thaw and eat.

Stash It

Keep a small stash of your kids’ faves in your purse to use a bribes when you’re out and about or the kids need something to occupy them.

Bake It

One of Ethan’s friends told him about Candy Experiments, and I’ve already ordered it. The kids can get rid of candy and learn some fun science at the same time! They can test candy for secret ingredients, peel the skin off candy corn, spread candy dyes into rainbows, or pour rainbow layers of colored water. The kids will learn how to turn candy into crystals, sink marshmallows, float taffy, and even make your own lightning!

Save It

Save that candy to use in Christmas stockings or holiday treat bags.

Vampire Dip Recipe (Not For Date Night!)

I am a huge fan of appetizers, especially hot ones. I have shared a ton of appetizer recipes here on my blog and have a board dedicated to appetizers on Pinterest. Anytime I find a recipe I can’t wait to try, I demand a family get together so I can make it. Over the weekend, I shared a picture of a copycat recipe I made for Slater’s 50/50 Vampire Dip that my pregnant sister-in-law asked me to make for her.

Slater’s offered me a job, which I’d happily take, and others on Instagram, Facebook, and at school chatting with moms asked for the recipe. So I thought I’d share!

Copycat Recipe For Slater’s 50/50 Vampire Dip

This Vampire Dip recipe is super simple to make, and absolutely delicious. It’s basically a classic artichoke dip recipe with a twist. Why’s it called Vampire Dip? Well, there’s 9 (or more!) cloves of garlic in it…it’s definitely NOT an appetizer you want to make for date night!

Vampire Dip Recipe

Ingredients

  • 9 cloves garlic, minced (use more or less to suit your taste)
  • Salt, to taste
  • 2 cups shredded Italian cheese blend
  • 8 ounces cream cheese
  • 4 ounces mayonnaise
  • 14 ounces artichoke hearts, drained and chopped
  • 1 teaspoon ground pepper

Instructions

  1. Preheat oven to 350ºF.
  2. Sprinkle a pinch of salt onto the minced garlic, and mash with a fork to get make it smoother. It doesn't have to be perfect, but make sure you get any big chunks.
  3. In a large bowl, combine garlic, half of the shredded cheese, cream cheese, mayonnaise, artichokes, salt, and pepper. Mix well.
  4. Spread into a greased 8×8 baking dish. Sprinkle remaining cheese on top. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until the cheese is browned and bubbly on top.

Notes

Serve with tortilla chips, French bread, pita wedges or chips, or any veggies you love!

The dip was absolutely delicious as is. My siblings also gave me some suggestions for improvements to kick it up a notch. The most popular suggestions were more artichokes (or chunkier pieces of it), adding roasted garlic, jalapeño, Italian sausage, spinach, and/or more raw garlic!
