Last week, I gave you my husband’s favorite steak recipe: Steaks with Bacon-Mushroom Bourbon Sauce. Unlike most of the recipes I share with you, that one takes some time and effort to make, but it’s well worth it! I also teased that I’d be giving you a recipe this week for his favorite side dish…one that is so simple to make that we eat it all the time and I’ve been making it for years. Like I said it’s simple to make, but it tastes like you put a ton of effort into it. This spinach salad recipe is a hit with the kids too! They refer to it as sour spinach.
Spinach Salad Recipe:
Hot Spinach Salad With Bacon and Vinegar
- 4 slices bacon, diced into small pieces
- ¼ cup white vinegar
- 2 teaspoons sugar
- 1 bag (at least 10 ounces) fresh spinach
- 5 green onions, sliced
- Salt and pepper to taste
- In a skillet, cook the bacon over medium heat until crisp. Drain, leaving a teaspoon or so of bacon grease. Stir in vinegar and sugar. Heat (stirring constantly) until sugar is dissolved. Remove from heat.
- Add the spinach and onions to the bacon mixture. Toss 1 to 2 minutes or until spinach is wilted. Add salt and pepper to taste.
