My whole family loves my breakfast Tater Tot Casserole. It’s super easy, fast to throw together and can be made ahead. My tater tot breakfast casserole is my go-to recipe for brunch potlucks because everybody likes eggs, bacon and/or sausage, and eggs for breakfast. I just found a dinner recipe, and I can’t wait to try it! I’m sharing with you because I know you’ll probably like them just as much as I do! Enjoy!
Tater Tot Breakfast Casserole
- 1 pound bacon cut into pieces or ground pork breakfast sausage
- 2 cups shredded cheddar cheese
- 2 cups milk
- 2 eggs
- 2 pounds tater tots (frozen)…I use either the extra crispy or onion one
Preheat oven to 350 degrees F.
Place the bacon or sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and spread evenly in the bottom of a 9×13 inch pan. Spread cheese over the meat.
In large bowl, beat together milk and eggs. Pour over cheese. At this point, if you are making this recipe ahead, it can be refrigerated overnight. Top with tater tots and salt, pepper, or other seasonings before baking.
Bake in preheated oven for 35 to 45 minutes. Cool for 5 to 10 minutes before serving.
Tater Tot Dinner Casserole
- 1 pound ground beef
- 1 onion, finely chopped
- garlic salt and pepper and whatever else you season with to taste
- 1 package tater tots
- 1 can condensed cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F.
In a large skillet over medium-high heat, brown the ground beef with the onions. Drain and season the meat to taste with seasonings.
Spread the beef mixture evenly over the bottom of a 2 quart casserole dish. Place tater tots evenly over meat.
In a small bowl, mix the soup and milk until smooth. Pour the mixture over the tater tots and sprinkle Cheddar cheese evenly over the top.
Bake in preheated oven for 30 to 40 minutes, until cheese is bubbly and slightly brown. Let stand for 10 minutes before serving.

I have a similar dinner tator tot recipe. The difference is that I add a small bag of frozen mixed vegetables to the beef/soup mix. I loved it growing up and now my kids like it.

I will have to try the breakfast version. You made me hungry just reading the recipe

I so love tater tot casserole…. my kids, lacking any good taste at all, do not like it. Maybe the breakfast one will be more to their liking!
