Jalapeno Creamed Corn Recipe: The Last Recipe You Will Ever Need For Potlucks!

Not my picture…actually came from Paula Deen’s creamed corn recipe on the Food Network site!
But I wanted you to have something to look at, and it looks similar to my final product!
This creamed corn is gonna knock your socks off, and everybody else’s socks that you feed it to! Once you make it, you will be asked to bring this to every dinner you go to…I’ve made it three times in the last two weeks! The recipe couldn’t be easier….enjoy!

Jalapeno Creamed Corn
1 stick (1/2 cup) of butter, room temperature
8 ounces of cream cheese, room temperature
2 cups of sharp cheddar cheese
3 jalapenos, seeded and finely diced (or more if you like some heat!). The 3 seeded jalapenos creates zip, NOT heat…kids even eat this and ask for more!
3 cans (11 ounces each) of white shoepeg corn, drained

Mix all ingredients together in a 13×9 pan. Bake uncovered in a 350 degree oven for 45 minutes. Stir again before serving. Enjoy!!

    Question as relates to cooking with jalapenos and having small children…I made homemade guacamole over the weekend, and I was so antsy about touching the girls' faces after that. I always dread taking out my contacts after I deal with jalapenos, and I didn't want to inflict any such pain on them! Do you know any tricks for getting the oil (I guess it is?) off your hands?

    Wow! Had to copy this one… yummy! Now, what I do to avoid Jalapeno Pepper oil on my fingers is really very simply. I always keep a box of those super cheap foldover sandwich bags in a drawer. Slide over your hand holding the pepper while chopping and deseeding… this also works great when spreading butter or oil over pans or veggies. Invert the bag and throw it away… tra la, no oil on hands! Come visit when you can…

    I'm definitely going to try this because we are big fans of both corn and jalepeno in this house.

    We were going to do a family excursion to the East Coast (where my husband grew up) in May and then decided that two babies on an airplane would be too much, so I understand your decision to opt our of your family trip! We will be going for Christmas, but it will be a lot easier (I hope) since they each be a little older. I just pray for no delays…
